Ilonka's Gulyas (beef stew)

Ingredients:
3 tbsp oil
1 med onion, chopped
3 tbsp sweet Hungarian paprika
1 lb beef cut in bite-sized cubes
6 cups beef broth
1 clove garlic, chopped
2 med carrots, sliced
4 - 5 med potatoes, cubed
1 tsp salt
1/2 tsp black pepper

Csipetke noodles:
2 eggs
1/4 tsp salt
1 - 2 cup (approx.) flour - add flour to make a stiff dough.
Pinch dough into small dime-sized pieces.

Preparation:
Heat the oil. Saute the onions in the oil. Sprinkle in paprika. Add in and sauté the beef cubes to partially cook them. Add beef broth, garlic, salt and pepper. Add carrots, and potatoes.

When meat and vegetables are cooked, bring soup to boil and add csipetke noodles. They are cooked when they float to the top.

Serve with a dollop of sour cream and slices of crusty bread.

Erzsi's Paprikás Csirke  (Chicken Paprikas) 

Ingredients:
2 lb chicken pieces
oil for frying
1 med onion, chopped
2 cloves garlic, chopped
1 red pepper, diced
3 tbsp sweet Hungarian paprika
1 cup chicken broth
2 tbsp flour
1 cup sour cream
1/2 tsp salt
1/4 tsp pepper

Preparation:
Heat oil. Add chicken pieces and lightly brown. Add onion, garlic, red pepper, paprika, salt and pepper. Stir in broth. Simmer on low heat for approx. 35 minutes until chicken is cooked. 

Nokedli Noodles  (similar to German Spaetzle):
2 eggs
1 - 2 cups flour
1/2 tsp salt 
pot of boiling water 

Mix salt into flour. Beat eggs. Add flour mixture to eggs as needed to get a soft-sticky dough consistency. Spoon teaspoon-sized dough pieces into pot of boiling water. They are done when they float to the top. Remove with slotted spoon or pour into a colander. 

In a separate bowl, whisk together sour cream and flour. Mix into chicken pan. Serve over nokedli.


Erika's Zserbo  (Apricot-chocolate pastry) 

Ingredients:
1 tsp yeast
1/4 c milk
1 tbsp sugar

1/3 c sugar 
1/2 lb butter
3 1/4 c flour
2 eggs
1/2 tsp baking soda
2 cups apricot jam
1.5 cups ground walnuts

Preparation:
Dissolve yeast in warm milk with a little sugar. Mix baking soda into flour. Add in butter, eggs, sugar, and yeast. Divide the dough into three equal balls.

Roll the first ball out onto greased baking sheet. Spread half the jam onto this first layer of dough. Sprinkle half the walnut/sugar mixture on top of the jam. Roll out the second ball of dough and place this on top to form the middle layer. Spread the second half of the jam and sprinkle the remaining walnut/sugar mixture. Roll out the third ball of dough and place this on the top. Bake at 375 for approx. 30 - 40 minutes. Let cool. Melt chocolate and pour over to cover top layer completely.
